One way to find his parents is through his children’s baptism records. I’m not sure if that is what you looked over. The name on his kids’ baptisms is Juan Perez and hers is correct. Whether he was baptized Juan Nepomuceno Perez remains to be seen.
My grandmother was from Mier, and I knew there was a flood and records lost, so I went to 1) Mexico Catholic Church Records, 2) Tamaulipas, 3) Mier, 4) Baptisms 1767-1874. The file itself has an index per book. On image 51 it says “Perez Canales Maria Antonia, Yr 1805, Pg 4, Record 5, Book 3.
From the Family Search index, I looked for 19 Jan 1805 Bap. for Maria Antonia and found her on IM 327. Unfortunately, no grandparents here, but perhaps with later children:
Jose Rafael, 1806
Maria Manuela, 1809
Maria Josefa, 1910
Maria Marta, 1813
Francisca, 1815. Death, 1833.
Isidora, 1818
Maria Concepcion, 1822
Plus three marriages that wouldn’t include grandparents.
Maria Antonia Lina was 11 days old on the 19th and her godparents were Vicente de la Garza and Maria Gertrudis Garcia.
If you have gone through these other 7 baptisms, and the godparents don’t look like they may be grandparents, then there are Padrones to look at.
Good luck!
