Just an educated guess. I think (hijo natural) is birth child & (hijo ligitimo) is probably adopted. The 1800s left many children orphans and relatives took children in as their own.

Hijo natural: it was term (word) to describe a child that was born out
of a married couple.
At that time existed only the religious wedding, civil weddings started
around 1850 in Mexico.
Some couples at the time of baptised live together but without
matrimony.

Hijo Legitimo: It was the child that born from a religious married
couple.

I’ve decided it’s a good idea to record baptism’s of children who were expuesto or parents unknown and who baptized them since some of these children were kept and raised as their own. It sometimes explains why I can’t find a baptism record in there name since they were not birth children. I guess only dna testing would tell that story!
